Methinks it is almost time to make the Christmas Pudding.

This recipe was first given to me by Win, a very missed family friend, a long time ago. It makes a rich and rather perfect Christmas pudding. Smile, and a perfect stirring challenge for young children. Here is my grandson making his Christmas wish!

Ingredients:

375g chopped raisins

375g Sultanas

250g Currants

200g chopped prunes

200g mixed peel

Grated rind of  one lemon

100g of chopped blanched almonds

1 large carrot grated

250g butter or suet

125g soft white breadcrumbs

250g Sugar brown

125g plain flour

¼ teaspoon of salt

¼ teaspoon of nutmeg

¼ teaspoon of mixed spice

4 large eggs

½ cup of milk

½ cup of brandy

½ cup of stout or orange juice

(Grease one large pudding bowl or two small.)

Mix all the dry ingredients together. Beat the eggs and add all the moist ingredients together. Mix well wet and dry together. Fill the mixture into the basins . Place two thicknesses of foil over basins and tie securely.

Steam until cooked.

Warning. Keep an eye on the water in the pot. If you let it boil dry, you will end up with a burnt pudding.
